Beta-carotene is the pigment that helps turn carrots, cantaloupe, and other fruits and vegetables orange or yellow.
No toxic level of beta-carotene has been shown in research so far. Most research has found that smokers benefit the most from beta-carotene supplementation, as lung cancer usually shows the strongest association with low levels off beta-carotene. And lung cancer risk is reduced the most in smokers who consume high levels of beta-carotene - containing foods or supplements.
